Resumo

Several products of high commercial value, such as collagen, have been developed from by-products from the fish processing industries, due to their wide applications and impor- tance for human health. The objective of this work was to extract, evaluate the yields and characterize the collagens obtained from the scales of the tambaqui Colossoma macropo- mum and pirarucu Arapaima gigas. Samples of tambaqui scales were kept in a thin layer of skin and pirarucu were removed from the skin, then subjected to two treatments, with T1 cut with the aid of appropriate scissors, in sizes from 1 to 3 cm, and T2 dried in air circulation oven for 8 hours at a temperature of 50 ̊C, then crushed in a hammer mill. Moisture, lipid ash and protein analyzes for the two treatments were performed in tripli- cate. collagen was obtained by means of soluble acid extraction and later the yields for T1 and T2 were determined. The moisture content in tambaqui scales showed average values of 57.62 and 8.43% for T1 and T2 scales, respectively, with a significant difference (p <0.001) between the processing methods. Values of 1.87% were found for lipids in T1 and 7.01% for T2. Moisture and lipid content were inversely proportional. For arapaima, higher values were observed in relation to the proximal composition for ash 39.49%, li- pids 0.17%, protein 31.03%, but a higher moisture content of T1 scales with 24.65% was observed. The yields observed for the extraction of C. macropomum and A. gigas in tre- atments T1 and T2 were 2.97 to 1.48% and 1.51 to 0.85%. %, respectively. Tambaqui and pirarucu scales are presented as alternatives for type I collagen source, with great potential for biotechnological applications.
