Resumo
Sustainable development is linked to social, environmental, technological and economic factors. The supply of products made from renewable materials will reduce the consumption of products obtained from mineral and fossil resources, which take longer to return to their natural cycle. Observing this situation and realizing that the result of every production process is the generation of waste which directly interferes with the quality of human life and the ecological balance of the planet, this work took advantage of the waste from the processing of pirarucu to obtain biomolecules such as collagen, gelatin, chitin and chitosan, which are used in different industries due to their functional properties. The biomolecules showed similar characteristics to those reported by other authors. Analysis techniques such as Fourier transform infrared spectrophotometry (FTIR), scanning electron microscopy (SEM) and polyacrylamide gel electrophoresis (SDS-PAGE), among others, were used to characterize the biomolecules and the bioplastics produced. Bioplastic formulations with a higher concentration of chitosan showed antioxidant activity and antimicrobial. This work recommends improving techniques to obtain biomolecules of industrial interest from pirarucu processing waste, as it will transform the lives of all those involved in this production chain. In fact, it will generate bioeconomy, new income and new bioproducts.
