Resumo

This study aims to evaluate the microbiological quality of the food produced in restaurants and schools from Manaquiri in the Brazilian state of Amazonas and also to assess the sanitary hygienic conditions in the kitchens from these sites. A total of 13 establishments were analysed (among which, 10 restaurants and 03 public schools), where a checklist - that was adapted and prepared by the Local Health and Sanitary Surveillance Department - was used. The applied checklist was based on the RDC 216/04 and RDC 275/03, both from the Agência Nacional de Vigilância Sanitária (ANVISA). The checklist is a mechanism in which the adequacy accomplishment level of health and sanitary standards may be evaluated. The served food was also evaluated by the usage of microbiological testing for the presence of 35˚C and 45 ˚C coliforms; coagulase-positive Staphylococci / g; Bacillus cereus and sulphite-reducing Clostridia and Salmonella / 25g, as recommended by the RDC ANVISA 12/2001. From a total of 125 analyzed samples, 23 were in disagreement with the current legislation, representing an overall inadequacy of 18.40 %. In this total amount, the presence of 45˚C coliforms was observed in 21 samples, Bacillus cereus in 05 samples and coagulase-positive Staphylococcus in just 01 sample; while the 35˚C coliforms and the genus Clostridium and Salmonella were not found. Thus, it can be assured that the sanitary risk is relevant and takes place in the surveyed areas by the possibility of pathogenic agents throughout the process of handling food
