Resumo
Acarajé in Manaus: Ethnographies of knowledge and connections around this food of African origin – Amazonas/Brazil. The present study is circumscribed in the panorama of the relations between knowledge and practices of African and Afro-Brazilian cuisine, in the urban space of Manaus. The object is acarajé; theme, acarajé in Manaus; The work's profile is qualitative with a reflective bias, without comparisons or expectations, but based on the veracity found on how acarajé is presented in Manaus. Representativeness comes from the availability of collaborating interlocutors through open questions, in the online field in times of pandemic, distancing and current health standards. Central Question - How is acarajé presented in Manaus? Objectives: General - Understand how acarajé is presented in Manaus. Specific: 1) identify, through the anthropology of food, the universe of acarajé in the geographic, historical and cultural dimensions in Africa, Salvador (BA) and Manaus (AM) with peculiarities and specificity. 2). To ethnographically investigate collaborating interlocutors regarding their “know-how” local acarajé, as a living thing, networks, connections and meanings involving commercialization and relationships with the sacred. 3) Elaborate interactions between food anthropology studies, ethnographic contents produced by our collaborators in Manaus, in their local “know-how”, and in the ABAM and IPHAN Institutions. It is intended, in the Final Considerations, to answer the central question of this study, the academic universe and society in general, respecting the local protagonism, about the presence of acarajé in Manaus, Amazonas / Brazil. Theoretical contributions of Mainardes (2009), Magnani (2009), Christian Ghasarian (2002). Formation of Representativeness are women or people self-recognized as such, over 18 years old, who make acarajés in Manaus. Theoretical foundation: Anthropology of Food.
