Resumo

When reporting to the Amazon come to mind the concepts of biodiversity and socio-biodiversity. This comes about because the legacy of knowledge of traditional peoples led over the centuries to live and get along with the different ways of living sustainably. This vast and rich region live 15,865,678 peoples, as the IBGE census (2010). This population, with varying levels of standard of living lives of exploitation of various economic activities that are aportable by the processing industry, trade, services, oil, gas, mining, agriculture and extractive. The focus of this work is focused on small producers of acai pulp. The objective is to evaluate the organization and management of production of açaí this small family producer of the urban area of Manaus, in a view of the biotechnology management and in economic and institutional. Over the decades, he has been exercising this activity without concern for the system of organization and production management. Therefore, its productive state, at least in Amazonas, still suffers from low productivity and low technological absorption. Internal and external demand açaí justifies an educational effort drawing on science and technology institutions places ( ICT's ) and governments to empower the small family producer and thereby increase the lifetime - the - shelf to keep your business competitive, while also maintaining the nutritional and sensory properties of the pulp. The final product or service of a supply chain seeks to consumers. This has shown some changes in habits that are the fruits of globalization. The standards of quality, particularly for the health of consumers vary between countries. With the integration of the markets it becomes necessary for the diffusion of standards in order to facilitate the transit of goods and services. This is important to also be fulfilled by small family producer challenge. To know the final link of the production chain sought to qualitative research with systemic focus. As an instrument for data collection drew on the form and not the participant observation. The effect (problem) was identified through the use of basic statistics, observing and interpreting the practices and attitudes to configure the diagram as secondary causes that focus on the determinants producing an effect. Based on data from field research, analysis and interpretation came to the following conclusion: the small family producer presents an organizational design and poor management in the development and marketing of acai pulp in natura, compromising their competitiveness in the local market and the hygienic and sanitary requirements that put consumers' health at risk. The market has no barriers to entry or exit. It is operated by a large number of small producers who have rudimentary technological process and the price is given by the market. Anyway, these market features allow us to state that market acai pulp in natura guard traces of perfect competition type.
