Resumo
Somatic cell count (SCC) is a parameter of quality due to its relationship for composition,
productivity and safety of milk and dairy products. The objective of this study was to analyze
correlation of somatic cell count in milk of buffaloes to its composition and yield of curd
cheese produced in Autazes, AM. Seventy-three samples of buffalo milk were collected and
analyzed for composition and somatic cell count. For determining milk composition it was
used spectroscopy analysis associated with flow cytometry procedures. The animals were
sorted in two groups, one with SCC below 400.000 cell mL-1 and another with SCC above
400.000 cell mL-1. The curd cheese was produced by using milk from animals of two different
groups and yields were calculated on percent weigh basis. The somatic cell count showed
positive correlation with fat and negative correlation with lactose present in milk. The yield of
curd cheese produced from buffalo milk containing SCC above 400.000 cell mL-1 was 1.08%
lower than cheese produced with buffalo milk containing SCC below 400.000 cell mL-1.
