Resumo
The quality of the egg has been a cause of concern for producers and consumers, defects in
quality can pose risks to public health, as well as economic losses. The objective of this work
was to conduct a study to evaluate the physical-chemical and microbiological quality of eggs
commercialized in the city of Manaus, AM. Samples consisted of commercial eggs, of the
white type and large size, with an exploratory character by the analysis of 48 lots. A total of
576 samples were analyzed for the physical-chemical evaluation and 96 samples for the
microbiological evaluation. The physical-chemical quality of the egg was evaluated with the
parameters of egg weight, presence of dirts, presence of cracks in the shell, shell percentage,
shell thickness, albumen height, Haugh unit, yolk index, albumen pH and yolk pH. To
evaluate the contamination, the most probable number of fecal coliforms, mesophilic counts,
molds and yeasts and Salmonella spp. PCR was performed for the molecular diagnosis of
Salmonella spp. There were differences (p <0.05) between characteristics of egg weight,
percentage of eggs with lower weight, shell weight, percentage and thickness, presence of
dirts, albumen pH, Haugh unit, yolk index and yolk color. In the microbiological analyzes, a
difference (p <0.05) was observed for the number of molds and yeasts and mesophiles found
in eggshell. There was no relevant contamination by microorganisms in the egg contents.
Positive samples were identified for Salmonella spp. by PCR.
