Ocorrência de contaminação por microrganismos em alimentos comercializados em praças públicas: uma revisão integrativa

Resumo

This work was developed with the aim of presenting information about the microorganisms present in food and their impacts on the health of individuals, especially in sales that take place in public squares where there is poor basic sanitation and a low level of hygiene. The study was carried out through an integrative literature review, seeking to highlight the main aspects involving microorganisms, such as: their characteristics, forms of proliferation, impacts on health and types of contamination. In addition, we sought to discuss the role of health surveillance in the guidance and inspection process in places where food is sold, paying greater attention to ensuring people's health. The research was based on three main aspects that are developed in the theoretical framework, namely: the performance of health surveillance and its current laws; contamination of food by microorganisms and; the impacts on the health of individuals. The theoretical basis was consolidated from information collected in internet repositories such as Scielo, BVS and ANVISA, where 14 recent scientific articles and legislation on the analyzed topic were found, and which reveals major impacts on the health of the population in relation to contaminants in food, thus leading health surveillance in municipalities to be concerned about this issue. In this way, it was possible to understand how microorganisms affect human life if there is no adequate guidance and quality hygiene in the food marketing process.
