Resumo
The Brazil nut is a seed native to the Amazon region with high nutritional value and
based products that seed can serve the interests of consumers seeking a healthy diet. Such a
business perspective stimulated the development of the condensed hidrossoluble Brazil nut
extract, which was characterized and compared to commercial soybean. The product showed
lower levels of fat, sugar and sodium and higher in protein and ash. The selenium content of
150 ug/100g is also a key differentiator. Sensory testing in approximately 90% of the 120
untrained participants stated also like condensed commercial soybean and of Brazil nuts.
After 60 days of shelf-life, the basis of the condensed Brazil nut showed acceptable
appearance and microbiological stability, making it a possible alternative to consumers
looking for healthy eating.
