Resumo
Euterpe precatoria, Mart, is popularly named in the Northern part of Brazil as açaí, a fruit that provides a beverage known as açai wine . The pulp type A (>14% solids), was used
to prepare a liqueur. Alcohol, commercial sugar and water were also used in this formulation.
The liqueur acceptance was tested by using a fifty-people randomly selected panel and the results indicate good acceptance for the product. Quality control was used to detect chemical and microbial modifications within 30 days. All results attend patterns established by the Brazilian Legislation (law) for fruit liqueurs.
