Understanding the importance of per capita in school nutrition is essential to meet the specific nutritional needs of each student. This not only promotes a more balanced and healthy diet but also helps prevent the waste of resources by adjusting portions according to actual demand. Thus, the aim of the study was the development of a per capita guide for the Regionalized National School Feeding Program (PNAE) in the state of Amazonas. Significant shortages in per capita data for regional foods were observed, allowing for the listing of just over 60 foods used in school meals in Amazonas. These foods were presented in a table, divided into 11 food groups (cereals and derivatives, vegetables, greens, and legumes, fruits and derivatives, legumes, tubers, proteins, milk and derivatives, oils and fats, sugars, sauces, and seasonings), indicating per capita values according to the age group of students: children aged 03 to 05 years, children aged 06 to 15 years, and adolescents >15 years. The organized material aids in understanding and applying per capita in school nutrition, contributing not only to the students' health but also promoting efficient resource management, creating an environment conducive to academic development and the overall well-being of the school community.
